This delicious chickpea salad is so quick and easy! Using leftover cooked rice helps to reduce waste by adding it into a new meal creation. Olive oil mixed with turmeric powder creates its own clean dressing that is also anti-inflammatory.
What you'll need:
- 1 cucumber
- Roma tomatoes
- 1 yellow bell pepper
- 1/4 cup sunflower seeds
- 1 can chickpeas
- 1/2 cup leftover cooked brown rice
- 1/4 cup olive oil
- 2 Tbsp balsamic vinegar
- 1 heaping Tbsp Connect Foods turmeric powder
- salt & pepper
- squeeze of lemon
Toss together gently and enjoy! You can even make it the night before and let the flavours marinade together... The olive oil and lemon will preserve the veggies and they will stay nice and crispy.
