Fresh Veggie & Chickpea Salad

This delicious chickpea salad is so quick and easy! Using leftover cooked rice helps to reduce waste by adding it into a new meal creation. Olive oil mixed with turmeric powder creates its own clean dressing that is also anti-inflammatory.

What you'll need: 

  • 1 cucumber
  • Roma tomatoes
  • 1 yellow bell pepper
  • 1/4 cup sunflower seeds
  • 1 can chickpeas
  • 1/2 cup leftover cooked brown rice
  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1 heaping Tbsp Connect Foods turmeric powder
  • salt & pepper
  • squeeze of lemon

Toss together gently and enjoy! You can even make it the night before and let the flavours marinade together... The olive oil and lemon will preserve the veggies and they will stay nice and crispy.

Enjoy this fresh cleansing salad!

Orange Vanilla Chia Pudding

Orange Vanilla Chia Pudding

This recipe is a great way of changing up normal chia pudding! Orange and vanilla flavours combine to create a yummy treat that is great for brekky, snacktime, or even as a healthy vegan dessert!

Soaking chia seeds activates their natural vitamin C, and adding a little bit of orange gives this recipe a full on vitamin boost!

What you'll need:

  • 1/4 cup Connect Foods chia seeds
  • 1 cup almond or coconut milk
  • 1 Tbsp maple syrup
  • 1 tsp vanilla bean powder
  • 1 whole orange

 

Take the orange and zest the rind, until you have about two tablespoon's worth. Slice the orange in half, and set one half aside.

In a bowl, squeeze the juice of half of the orange. Then add chia seeds, your non-dairy milk of choice, maple syrup, vanilla bean powder, and half of your orange rind zest. Whisk together for about 30 seconds. Allow to sit for about a minute and whisk again. This helps prevent the seeds from clumping during their process of expanding.

Allow to set in the fridge for at least an hour (or longer) Setting it overnight will allow the flavours to marinate together nicely!

Divide into serving bowls, and top with remainder of orange zest for garnish and extra flavour. Serve with orange slices on the side of the cup or glass.

Made with maca root and a pinch of sea salt for a salted caramel twist, and shaved cacao butter to cut down on the sugar in this already sweet treat. Cassava flour makes them gluten free!

Get a taste of the tropics with this yummy super green super smoothie! This flavourful combination will almost make you forget that this smoothie is packed with vitamins, minerals, and... spinach?

Adding spirulina not only creates this bright and beautifully green colour, but is also known for it's incredibly energising properties. One heaping teaspoon equals about one 3-gram serving, which contains 60% protein. It also contains vitamins that aren't widely found in common fruits and veggies, such as vitamins A, K1, K2, and B12. It also lowers cholesterol, reduces the risk of heart disease, and detoxes heavy metals.

Give this super smoothie a whirl today, and soak up all of it's incredible benefits! 

Ingredients:

  • 1/2 small pineapple
  • 2 bananas
  • 1 cup coconut milk (or coconut cream)
  • 1 heaping tsp Connect Foods Maca Powder
  • 1 heaping tsp spirulina
  • large handful of spinach
  • ice

Blend together and serve immediately. Makes about 2-3 servings. Serve with a garnish of pineapple for a truly tropical experience!
