Amaranth makes a great replacement for rice in any hearty veggie dish. This simple and easy recipe is great for whipping up a healthy dish if you're rolling solo. The leftovers keep nicely and reheat easily in a single pan.

What you'll need:

  • coconut oil
  • Connect Foods Amaranth (cooked)
  • 1/2 Japanese Pumpkin
  • 2-3 small broccoli heads, chopped into small florets
  • Seasonings: salt, cayenne, sage

Cook up 1/2 cup of Connect Foods Amaranth with 1 cup water. Set aside. 

Peel & cut pumpkin into small squares, a little bigger than your thumbprint. Heat coconut oil in a large saucepan on medium-high heat. Toss pumpkin just until it begins to brown on the outsides, and add broccoli. Lower heat and cook just enough to soften broccoli but it remains crunchy. Sprinkle seasonings and add amaranth.

Toss to combine and serve immediately. Store in the refrigerator for 3-5 days.
