Happy Australia Day! Raw Lamingtons Recipe

This recipe came to me as a way of trying to turn one of my favourite classic Aussie treats into something that's not only delicious abut also actually pretty good for you! The cake layer is made of 3 parts gluten-free flours; coconut, almond, and amaranth. Meaning these little treats have tons of aminos and also complete proteins! They're paleo, and also feature a little twist; açaí! I used some frozen açaí mixed with other berries in the jam layer to create a new delicious flavour. Hope you enjoy them as much as my friends did!

What you'll need...

Cake layers:

  • 1 cup almonds meal
  • 1 cup coconut flour
  • 1 1/4 cup Connect Foods Amaranth
  • 1/4 cup honey
  • 1/4 cup coconut nectar
  • 1 cup coconut cream
  • 1/4 cup coconut oil (melted)

Jam filling:

  • 1/2 cup frozen mixed berries
  • 1 packet frozen açaí pulp (we used Sambazon)
  • 2 tablespoons coconut nectar or honey
  • 3 tablespoons Connect Foods Chia Seeds


  • 1/2 cup Connect Foods cacao powder
  • 1/3 cup coconut oil
  • 1/3 cup coconut nectar or honey
  • 2 cups desiccated coconut

Using a food processor, grind amaranth into powder to make a flour. This should come out to about 1 cup after grinding. Add amaranth to a large mixing bowl, along with other flours and stir to combine. Add in remaining liquid ingredients for cake layer. I like to use a combination of honey and coconut nectar, as honey is anti-bacterial and anti-fungal, and coconut nectar has 14 amino acids, making these natural sweeteners superfoods in and of themselves!

Create a base layer in a small cake pan, using half of the 'dough'. Place in freezer.

Blend together jam ingredients, and remove cake pan from freezer. Spread the jam mixture evenly over the first base layer, and then place back into the freezer for about 30-40 minutes. Once it is completely set and solid, remove, and add the second layer of 'dough' on top. Place back in the freezer for about an hour.

Make chocolate coating by blending together all remaining ingredients, except the desiccated coconut. Set aside.

Gently lift the cake out onto a wooden cutting board, then using a very sharp knife, slice evenly into squares. Coat each square in chocolate, then roll in desiccated coconut. Place squares in the fridge and allow to set completely before serving.
