Superfood Energy Chocolate Bars

These superfood bars are really yummy and great for a powerup before some big physical activity! Packed with protein in the nuts, and seeds, antioxidants and texture from the chewy goji berries, bee pollen energy, and it's all tied together with some yummy raw chocolate!

What you'll need:

  • 1 cup sunflower seeds
  • 1 cup sesame seeds
  • 1/2 cup flax seeds
  • 1/2 cup goji berries
  • 1/2 cup almonds or brazil nuts (finely chopped)
  • 1/4 cup bee pollen
  • 1/8 cup honey
  • 1/4 cup coconut oil (melted)

For raw chocolate base:

  • 250g cacao butter
  • 1 cup Connect Foods cacao powder
  • 1/4 cup maple syrup (can also use palm syrup)

Using a double boiler, gently melt the cacao butter until it is liquid. Whisk in the sweetener of your choice, until it is completely mixed. Use a baking sifter to sift in cacao powder, so as to remove any clumps. Whisk again to blend completely.

Place some wax paper in the bottom on a large baking sheet, and pour in chocolate mixture. Place in the refrigerator or freezer.

In a large bowl, stir together all the ingredients for the top layer with a large wooden spoon.

Keep an eye on your chocolate and remove from the cold when it is almost set. The chocolate should be firm, yet melt to your finger when it is touched. Spread the seed mixture gently with a spatula over the chocolate. Use another piece of wax paper over the top, and gently press the mixture so that it is evenly. Use a cookbook from your kitchen to get it really flat and even!

Place in the freezer for about 20 minutes.

Remove from freezer. Lift the tray out with wax paper, remove the top layer of wax paper, and cut into squares on your counter or cutting board.

Keep stored in the fridge or freezer, depending on how crunchy you like your chocolate!

Makes about 16-20 large squares.
