These dense and delicious morsels will certainly bring some spice to your holidays! The maca powder and toasted coconut add an earthy and warm caramel essence to a classic Christmas flavour.
What you'll need:
- 1 cup pitted Medjool dates
- 1/2 cup pecans
- 1/3 cup pumpkin puree
- 1/2 cup toasted coconut flakes (cut into halves)
- 2 tsp vanilla
- 1 tsp Connect Foods Maca Powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- Pinch of salt
Put dates into a small bowl and cover with water, allowing them to soften for about ten minutes, then drain.
Place the pecans into a food processor and pulse until finely ground. Add in the soaked dates, and the rest of the ingredients, using only half of the toasted coconut shreds. Pulse until combined. Place into the refrigerator for 15 minutes to chill.
Remove from refrigerator and use your hands to form the dough into small balls. Roll each one into the rest of the toasted coconut to cover them. Store in the refrigerator in an airtight container.
Serve with cocoa or chai tea!
